According to Richard Jefferey, 5 is the universal number of balance and harmony a symbol of union and quintessence.
I met him in the IWA5 launch in Warabi a couple years back. The sake was served at different temperatures and paired with different food.
It was a good Sake, but was it great? I wasn't sure at that time, I honestly thought his Dom Perignon tastes better, and I got him to sign a lot of our bottles of Sake as well as Champagnes.
Over the years, however, the new Assemblage has been evolving, and one random day I come across Assemblage 4, man it was good.
Assemblage 4 intensifies through vibrant marine undertones into profound flourish of violets with a sophisticated dissolve.
